Executive Chef, Arena OperationsPay Details:
The annual base salary range for this position in California is $140,000 to $175,000 per year. The starting pay for the successful candidate depends on various job-related factors, including but not limited to the candidate’s geographic location, job-related knowledge, skills, experience, education/training, internal value, peer equity, external market demands, and organizational considerations.The Executive Chef of Arena Operations will oversee the development, planning, and execution of menus for Honda Center - with a focus on the quick service areas of operation, as well as events taking place at ARTIC. This position is also responsible for ensuring exceptional hospitality is provided, alcoholic beverages are served safely, and that food quality and sanitation standards are maintained at all times.
Responsibilities
Responsible for menu and concept development and event-based planning for a $35M food and beverage operation, with a focus on all quick service/Concession operation
Responsible for building accurate costs, recipes, photos, and preparation lists
Ensure recipes are executed accordingly by all team members in our concession operations
Create and implement production sheets and prepare schedules for team members to utilize and follow to maintain effective and time-sensitive results for high-volume production
Establish and maintain production pars for all concession operations to ensure consistent and efficient food production levels to meet sales forecast demands by event and location
Develop and oversee the standard operating procedures (i.e., opening and closing checklists) for the concessions culinary team for high-volume production
Research and develop cutting-edge culinary innovations to ensure Honda Center Food & Beverage remains on top of concession food trends
Prepare, compile, and analyze reports and data for the annual budget
Project food, labor, and other costs based on anticipated events and revenues; manage and maintain spoilage and waste in accordance to established budget.
Monitor and manage actual financial results
Take corrective action as necessary to help ensure that financial goals are achieved
Ensure proper staffing schedules for maximum productivity and efficiency
Manage and oversee concession operations to ensure high standards of quality are met
Control food and payroll costs to achieve maximum profitability in all major volume and high production areas
Work closely with all F&B departments to regularly evolve the concessions culinary and hospitality experience for our guests throughout the venue
Mentor and develop the Sous Chefs and culinary team members daily through pre- and post-shift meetings
Responsible for ensuring food quality in presentation and production throughout the venue
Educate team members by participating in programs offered by Honda Center and external partners of Honda Center
Engage with venue guests, team members, and internal peers/partners to ensure exceptional hospitality standards are achieved at all times
Responsible for the safe service and security of all alcoholic beverages
Maintain sanitation standards throughout the venue
Confirm timely certification of all staff per department policies
Ensure timely education of health and sanitation guidelines set forth by the OC Health Department, the State of California, and other governmental organizations
Support the hiring, training, staffing, and scheduling of all culinary team members
Partner with the F&B and Honda Center Senior Leadership to ensure a successful operation through proper forecasting and budgeting
Follow, adhere to, practice and enforce the safety and sanitation standards set forth by the Food & Beverage department, CDC, and OC Health Department, including social distancing, use of face masks when in the presence of guests, use of gloves when handling guest food or beverage, frequent hand washing, and regularly scheduled cleaning/sanitizing high contact surfaces and surfaces used for guest food and beverage
Other responsibilities and tasks as deemed appropriate by the Executive Chef and Senior Management Team at Honda Center
Skills
Bachelor’s degree in a related field or equivalent experience
Minimum 7 years of experience working in a Food & Beverage environment
Sports and entertainment and multi-unit operation experience preferred
Extensive knowledge of culinary theory
Exceptional application of skills and knowledge
Experience leading large culinary teams
Experience overseeing multiple locations with varied service types
Strong attention to detail
Excellent communication skills, both written and verbal
Solid organizational skills with the ability to handle multiple projects at one time
Working knowledge of basic PC applications (Microsoft Word, Excel, Outlook, etc.)
Working knowledge of time and attendance system (ABI preferred)
Working knowledge of inventory management software
Able to work a flexible schedule, including nights, weekends, and holidays
